This meal might make you wonder, how many superfoods can we cram into one meal? But really, our intention is always deliciousness first. This dish started with a Thai-style sweet potato curry our founder tasted in Wisconsin—it was so luscious and fragrant, he couldn’t get it out of his mind. Our chefs soon crafted a silky soup inspired by it, blending sweet potatoes with a warmly spiced yellow curry paste and rich coconut milk. We love the soup so much, we use it here as a sauce alongside turmeric-dusted sustainable salmon, fire roasted veggies and a satisfying blend of rice and quinoa. Quick-marinated kale brings a welcome burst of freshness while unsweetened coconut adds a little crunch. The upshot: It’s a super meal of superfoods that’s super good (and of course, super good for you.)
