You’ve heard of Belgian waffles but how about those from Liège? On many corners in Belgium, you’ll find street carts selling sweet waffles like this one. Made with a yeasted dough that’s a bit like brioche, they are more substantial than the airy waffles we find at most breakfast spots in the United States. The secret to their chewy-crisp perfection are the beads of pearl-shaped sugar mixed into the dough. When cooked, these beads melt, creating gorgeously caramelized edges. Instead of offering these waffles grab-and-go style like the street carts, we serve them with our tangy blueberry-chia jam to create a wildly good (but indulgently healthy) sweet treat we love for breakfast, snack, dessert, or really, any time.
