Margherita Pizza

Fresh mozzarella, basil, red sauce

Like a well-fitting suit or little black dress, the Margherita pizza never goes out of style. Legends say that it’s named for Queen Margherita of Savoy, who, while visiting Naples in 1889, asked the most famous pizzaiolo Raffaele Esposito of Pizzeria Brandi, to make her a pizza. Her favorite pie relied on a few simple ingredients: a vibrant tomato sauce, rounds of milky mozzarella, and fresh basil leaves—ingredients that matched the colors of the Italian flag. For our Margherita, we stay true to the classic version, using Italy's famous San Marzano tomatoes for the sauce and fior di latte—an especially tender, mild fresh mozzarella—for the cheese. After we bake the hand-stretched pizza in our artisan oven, we scatter fresh basil leaves on top, which bloom with fragrance as soon as they hit the hot pizza. It’s simple, delicious, and fit for a queen.
